I had a Palm Treo 700p for 2 1/2 years followed by my current 755p and my wife's Centro.

I find the following to be very useful, if not a 'must have' for anyone using Palm OS:

Meteor (the BEST replacement to the Memo app I have used b.c it has nested folders)
Alarms v1.2 (from Palmarysoft)
PocketTunes deluxe 5.0
FileZ (allows you to move/copy even protected, hidden, read only files even from ROM)
ApplicationsPanel 1.3 (allows you to 'hide' icons - even ones on ROM)
Music Tones (allows you to use ANY tone, ringer, mp3, midi, etc as an alert/ringer)
Vexed (with all plugins - a very addicting game)
